Building a custom debian kernel with LUKS support

If I want to build a custom debian kernel, am I correct in my understanding that I would want to use:

-binary

+luks

for my use flags?

If so, it appears the ebuild won't let me do it.

If I'm not worried about building unnecessary modules and features into the kernel, then, I can just call it a day by adding the luks use flag and defaulting to binary?
