Thanks for answer, . I know about this option, but it does not help to totally unmerge nano because it glued to minimal profile. Is there any reason to use app-editor/nano instead virtual/editor in minimal profile?
Now i solved my problem with replacing one line in /usr/portage/profile/funtoo/1.0/linux-gnu/flavor/minimal: app-editor/nano -> virtual/editor and on @system update portage does not try to emerge nano. But i dont like this solution due to git pull conflicts in the future.

I have a question: why minimal flavor (/usr/portage/profile/funtoo/1.0/linux-gnu/flavor/minimal) using app-editor/nano instead of virtual editor?
I want to make vim the default editor in system and unmerge nano, but in minimal system flavor nano is hardcoded. So the profile/virtuals ignored on next emerge @system or @world and portage wants to install nano.
Is there another way to replace nano to vim?

Problem solved by reading docs. I can exclude nano from system profile by /etc/portage/profile/packages.
